and is made only with peanuts. There's a local store brand I get that's quite good. Never Jif or the other brands that contain sugar. It has to be crunchy, though.

Note to those who don't read labels, almost all the other "natural" kinds of peanut butter--Smuckers, Jiff, etc have SUGAR in them. How damned natural is THAT? (but I digress).

AND, yes, of course, you can go to Whole Foods or other natural grocery stores and grind bulk peanuts into your own--but, I'm fine with Kroger's Natural.

So here's a tip for DUers: If you're taking a PBJ to work or school, spread regular butter on the jelly side (okay marmalade for those who know) and the wet side of your sandwich won't get soggy before you get to eat it.
Oh, and my choice is natural brands, smooth, so long as you don't have to stir in the oil.

I like this local brand out of the Detroit area. Pretty sure my mom probably bought it because it was cheaper than Jiff or Skippy, but I've been eating it ever since I was a kid. I prefer just Peanut Butter and Butter, no jelly.

The oil rose to the top, and it had to be stirred; it was my dad's favorite! It was made by Reilly Foods

and several other products that I have used

When I found the website, the peanut butter was no longer in the product line.

I don't like Adams peanut butter. It has a chalky consistency, even the no-stir. I get either Jif or Skippy "natural" and I know, I know, there is some sugar even in those brands, but they have solved the texture issue. Occasionally I will find a brand with no sugar that I like but then it vanishes off the shelves, except for Adams.

My wife is the opposite. So we buy both. But, the jars last a LONG time, as we don't eat a whole lot of it.
Peanut butter is very useful for Thai cooking.

Kidding!
I use shallots not onions, so 2 decent sized ones diced pretty fine.
Red bell pepper, julienned.
Thinly sliced mushrooms. (Any type)
I use 2:1 canola to sesame oils in a wok and cook over medium heat until the shallots are translucent, then I add the peppers & mushrooms and cook until shallots are beige.
Add an ounce of rum and reduce the alcohol. Add 1 tbsp of minced garlic, 1 tbsp of sambol. Mix thoroughly.
Pour in a whole "brick" of unsweetened coconut milk and let get hot.
Once hot, add about 1.5 tbsp of smooth peanut butter & a handful of salted peanuts or cashews.
Let simmer on medium until some of the water in the coconut milk reduces.
While that's happening, add 2 tbsp of curry paste, 2 tsp of turmeric, 1 tbsp of smoked paprika, 1.5 tsp of cinnamon, ½tsp of allspice, ½teaspoon of white pepper, a pinch of nutmeg & cardamom, & the juice of 2 limes.
Add about a quarter cup of fresh, chopped cilantro.
Add salt until the flavors blend & pop.
When it all comes to a light boil, add peeled/tail-off shrimp and cook until shrimp is pink. I use 31-35/pound, because each shrimp is bit-sized when cooked. You can use larger shrimp if you like.
If you like it hotter (my wife prefers less heat), a couple diced Thai chilis work. If not available, habanero will work, or powdered cayenne.
If it didn't reduce enough, add a fork full of corn starch with around 3 ounces of water, slurry it and pour it in while stirring. That will thicken it. I do this sometime when I've lost patience with reduction. Oh, and add this slurry before you add the shrimp.
If you don't reduce it enough, don't be afraid

...an Asian salsa. It's a hot chili & garlic paste. (I have a typo in my first post; it's sambal not sambol. Sambols are a type of dish using it, like pol sambol.)
I get mine at a Jewel-Osco (Albertsons) but I've seen it at Walmart and on line.
This is a 2 pack. The one I use is the jar on the right. There are other brands, but I like this one the most. Some have too much vinegar.

Otherwise, I don't care for it.
Hubby loved smooth, and didn't need anything with it. He'd scoop up a tablespoon full from the jar and eat it as is.

I was hosting a friend of my son’s once when they were small, about 5 y.o. I was making PB&J sandwiches for them while the friend watched me intently. He told me I made it wrong. His mom always spread the PB on one slice of bread and the J on the other. I was spreading the J on top of the PB.

Mr. Diamond has to have elderberry jelly and no other kind on a PB and J.

I had a college roommate who thought putting jelly and PB together in a sandwich was disgusting. Only PB for her.

the machine in the grocery store where you grind your own from a choice of salted, unsalted, or honey roasted peanuts. I like all three. They also have almonds or hazelnuts you can grind which are much more expensive but delicious for a rare splurge. I have a grandchild that is allergic to nuts so we discovered sunflower seed butter which is really good. If buying off the shelf, I like Adams crunchy. I like to put peanut butter on raisin bread toast. One time I added bacon between two slices and I never looked back! 😁

but not as much as my father did. In all the 32 years I knew him, I never saw him get through a day without peanut butter
Usually it was with vanilla wafers or graham crackers as a late night snack.

My favorite way to eat it is in a peanut butter and banana sandwich on Dave's bread or on hot toast.

I have an amazing peanut butter cookie recipe - chocolate shadows
Peanut butter cookie dough, marbled with melted chocolate chips with peppermint extract stirred in

sunflower butter is the closest thing to it in both taste ans price. I like mine crunchy.

Almond butter is a luxury for me which I often can't afford. Also crunchy.
