My favorite Stones album is

Exile on Main Street.

The layered sound incorporating rock, country, soul, gospel, rockabilly, boogie-woogie...

The great sideman Nicky Hopkins and Bobby Keys, the background vocals.

Mick Taylor's playing with seemed to invigorate Keith.

Mick's singing in Let It Loose.

Brian Jones played a variety of instruments on BB, but his best track was slide guitar on No Expectations. Substance abuse and a deteriorating mental state led to his demise. Her only played some small bit parts (congo and autoharp) on Let It Bleed.

It has a rare quality: it gets better every time I listen to it.

The Stones had a string of incredible LP's: Between the Buttons, Beggar's Banquet, Let It Bleed, Sticky Fingers, Exile on Main Street, Goats Head Soup, and It's Only Rock & Roll. Seven albums over eight years, and all amazing. They became a mere shadow of what they used to be, but back in the day there was no one better.
