What's for Dinner, Mon., Feb. 24, 2025

Ground turkey sloppy joes. Making my own sauce which has garlic, chopped onion, parsley and red bell pepper. It also requires a cup of tomato sauce, Worcestershire, mustard, and ketchup.

Of course, a sloppy joe isn't any good without a bit of brown sugar, but this recipe only has 1 T in it, along with some chili powder.

Onion roll.

To go with it, a chopped salad--lettuce, green and yellow peppers, zucchini, carrots, celery, and cucumber. Chia seeds on top. Italian vinaigrette, homemade.

Dessert: The cake I described yesterday was so good I'm doing it again. It was cold, though, and ice cream did not appeal to me, so I let it melt and I put crystallized ginger and dried pineapple in it. Served it over crumbled yellow cake with a hot mug of decaf. Really, really, good.

jumbo bratwurst and mashed potatoes with Irish butter. The brats will be accompanied by a liberal (see what I did there) allowance of Hunt's 100% Natural Ketchup (No High Fructose Corn Syrup). The beverage will be a huge consumption of ice cold whole milk. For "dessert" I am contemplating a couple of slices of Pepperidge Farm Lemon/Blueberry Swirl bread with more Irish butter. If not the bread then I may indulge later in Hudsonville Mackinac Island Fudge Ice Cream. I may do both. I've been known to do both.

I'm on my way to getting better. I still have low grade headache and occasional vision blurriness and I've had naps with my cats.


Dinner tonight is canned lentil soup on top of rice and tea

TJ is trying to sleep off two long night shifts so I am on my own. The pup is dashing around shaking his toys to death disturbing TJ.

I thawed some roast pork, shredded it and warmed in BBQ sauce
I going to eat it atop a slab of toasted sourdough bread with some bread and butter pickles.

Not sure what I'm having after if anything. Perhaps low carb vanilla ice cream with blueberries or just some fruit and decaf Earl Grey

Glad to see a post from irisblue and hoping she is better.

They had some of that pre-seasoned ground turkey on sale at the supermarket. I got some tortillas, tomatos, an avocado, a bit of cheese ... you get the idea.

Thinly sliced Savoy, red cabbage and brussel sprouts, minced red onion, yellow bell pepper, shredded carrot, thinly sliced apple and chopped smoked tofu. Homemade apple cider vinaigrette mixed with vegan mayonnaise and a bit of horseradish. Once plated, toasted sliced almonds sprinkled on top. Iced green tea with lemon. Oatmeal raisin cookies for dessert. Cheers! 🥂
