On one of the morning shows, a celebrity chef used cream cheese in their mashed potatoes (rather than milk) along with chives. It is delicious! I add garlic too. I also use cauliflower in place of potatoes (making it keto or low carb). It becomes an an absolutely yummy comforting side dish or base for your beefy ghoulash goodness, or other beef dish.
