do what I do and buy the pre-cooked (approximately 4-41/2 pound) turkey breast from Costco (under its own Kirkland brand). Reasonably priced and NO NITRATES!

Ingredients: Turkey Breast, Turkey Broth, 2% or less of sea salt, sugar. That’s it!

I keep it in a glass air-tight container for up to two weeks in the refrigerator, carving off 3-4 ounces most days. I'm sure most would go through it more quickly. You can also refrigerate some and freeze the rest. Good quality.
