eating lots of veggie and plant protein-based dishes in advance of C. Eve and the Big Day -

spaghetti squash and pesto with roasted tomato sauce and sauteed onions, garlic and sweet peppers

braised greens (collards, kale, etc) with chickpeas, ginger, garlic, onions over quinoa

roasted root veggies (potatoes, beets, onions, carrots) with rosemary and olive oil over quinoa


For Christmas eve, Crab Cakes and Broccoli

For Christmas dinner, baked Cod with roasted potatoes and brussels sprouts with browned almond butter


trying to maintain my 50 lb weight loss, and we are also moving more toward plant based to lower cholesterol.
