Less carbs and fewer calories and no soy....They are made from veg fiber. I have heard you can get them at Whole Foods but I just get a monthly shipment direct. I love the "rice" and angle hair.

I eat them pretty much every day in bouillion with a hit of Sri Racha and some spinach and green onion
