Keto & Gluten Free Cream Cheese Muffins.

This is my own recipe. I basically added a few more ounces of cream cheese and an extra egg from another recipe that I had been making and baking since it wasn't making a dozen muffins. My recipe makes a dozen regular sized muffins.


Preheat oven to 350F.

4 ounces of cream cheese at room temperature
3 large eggs at room temperature
4 tablespoons of melted butter
1 teaspoon of vanilla
1/4 teaspoon salt
1 1/2 teaspoon of baking powder
1/4 Cup of sugar substitute
1 1/2 Cup of almond flour

*Optional*
3/4 Cup of Sugar Free Chocolate Chips
or
3/4 Cup of blueberries, strawberries or any other desired fruit.
or
just make plain cream cheese muffins if to your liking


Mix cream cheese and eggs. Add melted butter, vanilla and salt. Mix well. Add baking powder, sugar substitute and almond flour. Mix well. Add optional ingredient(s) if desired.


Bake 20 to 24 minutes, or until done.
