7. Coronation chicken salad

(curried, with mango) over a bed of leaf lettuce. Apple crisp for dessert, to use up apples that haven't stayed crisp for eating out of hand. Food to watch the Iowa Hawkeyes lose by, sigh.

There's a potluck at church tomorrow, so today was a cooking marathon for me: chicken cordon bleu casserole, stuffing with sausage and mushrooms, and prepping the ingredients for a salad to put together just before serving, with romaine lettuce, beets, honeycrisp apples, and goat cheese.
