1. I usually start with a mirepoix broth. Two onion chopped. two chopped carrots and two chopped stalks of celery.

I sauté the onion with oil and then when translucent I add the carrot and celery to about 4-5 quarts of water. Add a bit of salt and pressure cook or stove top cook till veg is soft. At this point you can wiz it up with a stick blender of regular blender or just strain out the veg.
That is my base. From there I just add anything I like.. Onions? onion soup. Beets? borscht. Chicken? chicken soup, etc...
