4. Going Southern and Mexican tonight

Ham slices, Mexican Rice, blackeyed peas with onions, cornbread fritters with some corn added.

Mexican Rice:
Make a pan of brown rice (or white), and layer it in a glass baking pan with sour cream, canned sweet chili peppers, and Jack cheese, ending with cheese on top. Cover with foil and bake in oven at 350 degrees for about 40 min, or until cheese is melted and everything else is hot. Nummy!
