2. Shrimp and grits

Grits into boiling water and keep stirring them.

When grits are 80% done add butter, and cheese … sharp Colby and what ever left over cheese
you might have. Stir in butter and cheese. Leave on lowest temperature possible.

Cook 3 or 4 thick slices of bacon….. remove bacon from deep skillet and leave the grease in the
pan …. add one to two pounds of cleaned shrimp (depending on how much grits you cooked)that
has been cut into 2 or 3 pieces into the grease…. As the shrimp starts to turn pink add garlic, green
onions, scallions, and just a little salt.

Pour some of the warm grits into a bread pan about 1/2 way up the pan ..and then add some of the
shrimp mix to the grits …add more of the grits and shrimp mix to the pan top with bacon bits and parsley.

Freeze all the pans you are not going to eat. Eat the shrimp and grits that you want.

When you want more take a frozen pan from the freezer and back it @ 180 F for about 30 to 60
minutes … until it is done.
