7. Vegetable Biryani

Monday

Soaked brown basmati rice for an hour. Then sweated chopped onion, carrots, green pepper, jalapeño pepper, cut green beans minced ginger and garlic. I added the rice, chickpeas, a slurry of broth and Rani Biryani spice paste, bay leaf, cinnamon stick and more broth before covering. Midway through cooking I added golden raisins and slivered almonds. Made a plant based cucumber raita as a condiment and toasted some naan. Cheers!🥂
