9. First thing you need is an oven thermometer

It sounds like your oven is most likely miscalibrated and isn't giving you the proper cooking temperature.

An oven thermometer is something I've always kept since I lived in shitty Boston apartments and none of them had stoves with properly calibrated ovens.

ETA: This advice goes for the new stove, also. An oven thermometer is an essential piece of kitchen gear, IMO.
